Miso Marinated Black Cod (Aka Sable Fish)
Ingredients
Marinade:
1/4 cup white miso
1/4 cup mirin
1/4 cup sake
3 tbs. sugar
Wild-Caught Cod Fillets
Saucepan
Sheet Pan
Instructions
In a small saucepan, combine all marinade ingredients and simmer for 5 minutes, whisking constantly to ensure it doesn’t burn*. Remove from heat and let cool.
Keep a careful eye on it while cooking because miso burns easily.
Place cod fillets (with skin still on) in a container. Pour the marinade over fish and leave in the fridge for 1 to 4 days to marinate.
We leave fish in full fillet form. Feel free to cut into serving size pieces before putting into marinade.
Once fully marinated and ready to cook, coat both sides of raw fish with Cap’n Rodney’s blackened seasoning.
Place on cooking sheet with parchment paper and broil on high or bake at 400 degrees for 20 minutes.
Remove and serve! It should have a nice brown crust when done. Once cooked, the bones are easy to remove with tweezers. We like this dish over a bed of rice and plenty of veggies!
