Rockfish Ceviche

Ingredients

  • 10 Lemons (Juiced)

  • 5 Limes (Juiced)

  • 1 Red Onion

  • 8 Roma Tomatoes

  • 4 Jalapenos

  • 2 Serranos

  • 1 Bunch of Cilantro

  • 1 Large Cucumber (Diced)

  • 3 Medium Rockfish (Filleted & Cubed)

  • 2 Glass Bowls

 

Instructions

  1. Cube the fish fillets and place it in a glass bowl. Then add all the lemon and lime juice. Soak fish overnight, so the citrus slowly seeps into the fish.

  2. Chop all veggies and herbs finely and mix together in a large bowl.

  3. After overnight marinating, remove fish from the citrus juice and stir into the veggies.

  4. Serve cold with tortilla chips and avocado.

    • Feel free to add some of the citrus juice back into the ceviche for more tang.

Notes: Feel free to add some of the citrus juice back into the ceviche for more tang. This recipe can be used with other fish like Wild King Salmon, Halibut, or any kind of tuna (albacore, blue fin, yellow fin, or bonita).
